How Long Bird's Nest Keeps, and Where to Put It

Bird's nest has two entirely different storage lives depending on whether it is dry. Treating one like the other is how expensive nest gets thrown away.

Dried nest: years, at room temperature

Properly dried and sealed, bird's nest keeps for up to about three years. What it needs is unremarkable:

  • An airtight container — the original box is usually fine if it seals; a vacuum bag is better.
  • Cool, dry, dark. A cupboard, not a windowsill.
  • Away from strong smells. Nest picks up odours. Do not store it next to coffee, spices or anything fragrant.

Do not refrigerate dried nest. This is the mistake people make out of good intentions. A fridge is humid, and every time the container comes out into a warm kitchen it collects condensation. Damp nest grows mould, and by the time you can see it the box is finished.

Soaked nest: days, in the fridge

Once nest has been soaked it is a wet, high-protein food and behaves like one. Drain it well, put it in a sealed container, keep it at around 4°C, and use it within five to seven days. Some sources stretch that to ten; five to seven is the safe read.

This is genuinely useful, because it means you can soak and clean a batch on Sunday and steam a portion each morning without repeating the fiddly part.

Cooked nest: eat it soon

Steamed nest, sweetened or not, should be refrigerated and eaten within one to two days. A week is sometimes quoted; for something you are eating for its protein, two days is the sensible limit.

How to tell it has gone

Dried nest that has taken on moisture feels soft or slightly tacky instead of brittle, and may show dark spots. Soaked or cooked nest that has turned goes sour and slippery. Neither is worth risking — this is not a food where a small amount of spoilage is a minor problem.
